About The
Fermentary
We believe great food starts with great knowledge. The Fermentary was born from a journey around the globe, seeking out the very best of food craft to learn not just what to make, but how to make it.
From a six-week farm residency at the renowned Ballymaloe Cookery School in Ireland, to an immersion in Peru with fermentation guru Sandor Katz, and classes at River Cottage HQ in England, we’ve been learning from the most knowledgeable experts we can find to bring that knowledge home.
Now we've brought these hands-on techniques home to North Carolina. At The Fermentary, we practice and teach the art of fermentation, creating small-batch ferments and teach classes to share these skills behind them with our community.
